- 4 tbsp coconut flour
- 4 large eggs
- 4 packet splenda
- 1 tsp vanilla extract
- 1/2 tsp baking powder
- 1/2 cup pumpkin
- 1/2 tsp cinnamon
- 1 scoop pea protein
- 1 cup almond milk

Instructions
- Preheat over to 350 degrees F (205 C).
- Beat together eggs and almond milk, add vanilla extract.
- Add coconut flour, protein powder and sweetener, continue mixing.
- Add pumpkin, baking powder, and cinnamon, mix well.
- Pour batter into muffin cups, bake for 25-30 minutes or until golden brown.
