- 4 large eggs
- 1 cup egg whites
- 100 gram ham
- 1 small onion
- 1 cup mushroom
- 10 oz frozen spinach
- 1 cup cottage cheese 1% fat

Instructions
- Preheat oven to 350 degree F.
- Shred meat and brown in a frying pan.
- Rinse and drain spinach.
- Sautee mushrooms, spinach and onion in the frying pan.
- Whisk eggs and egg whites.
- Combine eggs, meat, vegetables and cheese.
- Lightly grease muffin pan (or use silicon pan)
- Fill each muffin pan 3/4 full
- Bake for 15-20 minutes or until muffins brown
