- 1/2 cup egg whites
- 2 large eggs
- 2 cup spinach
- 1 cup mushroom chopped
- 1/2 oz feta cheese
- 1 tsp coconut oil

Instructions
- Heat oil in in a pan on medium heat.
- Beat eggs and egg white in a bowl.
- Sautee mushroom and spinach in the pan.
- Add egg mixture to pan, cook until egg starts to firm.
- Flip and continue cooking.
- Add crumbled feta in the center of the eggs.
- Fold one half of the egg mixture over and continue cooking for 1 minutes.
- Remove from pan and enjoy.
