Ingredients
- 1.5 cups kale rubbed in olive oil & lemon juice
- 1/2 large bell peppers chopped
- 2 cups cucumbers chopped
- 2 tbsp pumpkin seeds
- 1 oz walnuts chopped
- 2 tbsp dried cranberries
- 1 tsp honey mustard
- 1.5 tbsp olive oil
- 1 tsp balsamic vinegar

Instructions
- Combine the first six ingredients together to make the salad.
- In a small dish whisk together the mustard, oil and vinegar.
- Top the salad wit the dressing. Top with additional protein if desired.
